Steamed Chicken and Pasta/Soba Salad

Ingredients (4-5 servings)

400g Chicken breast (if short on time, you can cut up and use the roast chicken sold at super markets)
150 g pasta (any type of pasta or to give it a Japanese touch, soba, somen or vermicelli)
1 Cucumber
3 tomatoes
Parsley
150 ml Mye’s Miso Dressing

 
  1. Steam chicken in steamer for 20 minutes. (You can steam in microwave as well.) Cool, and then cut into bite-sized pieces. Boil pasta in plenty of lightly salted boiling water for 10- 12 minutes. Cool. Thinly slice cucumber. Slice two of the tomatoes into thin rings. Dice the third tomato. Chop half of the parsley and leave rest for garnish.
  2. On a larger platter or bowl (glass), place cucumber, tomato slices, pasta and chicken in layers. Top with dices tomato and shopped parsley. Keep Refrigerated. Just before serving, pour Mye’s Miso Dressing on top. Garnish with parsley.
